Smoked Grilled Cheese

This simple but satisfying grilled cheese uses focaccia bread, smoked mozzarella, pickled red onion and grilled chicken breast.
Servings 4 Sandwiches


  • 4 ea 6" × 3" Focaccia Pieces, split sliced
  • 1 cup Arugula
  • ½ cup Pesto
  • 12 oz. Polly-O Smoked Mozzarella sliced
  • 12 oz. Grilled Chicken Breast shredded
  • 4 oz. Pickled Red Onion


For Each Sandwich:

  • Preheat griddle to 350°F.
  • Spread 1 Tbsp. pesto onto insides of both halves of each focaccia slice.
  • Build sandwich in following order: Bottom focaccia slice, 1½ oz. smoked mozzarella slice, 3 oz. chicken shreds, ¼ cup of arugula, 1 oz. pickled red onion, 1½ oz. of additional smoked mozzarella, top half of focaccia.
  • Generously grease griddle and toast sandwich on both sides until cheese is melted.
  • Cut in half on bias and serve immediately.
